The Michelin-starred chef improves on dishes he savoured in childhood. He recreates his mother’s sausage roast, visiting a Gloucester farm to find the best pork possible for use in the recipe. He also cooks his version of a lasagne, incorporating a few extra twists to enhance the flavour, and heads to his old school to prepare a pineapple upside-down cake for the hungry teenagers who now study there.
