The chef continues his campaign to improve the food served in hospitals by attempting to bring about change on a national scale. In the first edition, James tries to transform patient meals at Princess Alexandra Hospital in Harlow, Essex, where an overspend has put the future of the catering team in jeopardy. Working with the department's outgoing manager, he attempts to turn around its finances and save the jobs of the kitchen staff.
