The fourth quarter-final sees the four heat winners take on the fiendishly difficult palate test, recreating John Torode's poached and fried pepper chicken, with herbed gnocchi, and mushroom and tarragon sauce, having only had a couple of minutes to taste the food and write down what they think the ingredients are. Can they identify the three types of mushroom in the recipe? They then cook a showstopping dish for the judges and food critic Jay Rayner, before finding out who has made it through to the semi-finals.
